Updated: Feb 26, 2022
A super filling and delicious lunch or dinner that can easily be meal-prepped! With soba noodles, umami-seasoned tofu, and refreshing vegetables, this Asian-inspired recipe is one of my favorites!

Tofu:
How to:
- Drain and press two blocks of extra firm tofu (make sure that ALL of the water has been pressed out)
- Cut tofu into cubes the size of your liking (I cut each block in half, then each half into eight pieces)
- Arrange tofu cubes on a baking sheet lined with parchment paper and sprinkle with salt, pepper, umami seasoning (I got mine from Trader Joe's), red pepper flakes, and any other spices you like!
- Bake at 400 degrees for twenty minutes or until golden brown
Peanut Sauce:
Ingredients:
-1/3 cup creamy peanut butter
-2 tablespoons rice vinegar
-2 tablespoons soy sauce
-2 tablespoons honey or maple syrup

How to:
-In a small bowl, mix together all ingredients until smooth
The bowl:
Ingredients:
-1 cup soba noodles
-desired amount of tofu
-1/2 cup edamame
-1/2 cup cabbage
-peanut sauce
How to:
